French Toast with Caramalised Banana 
Had to share my version of this breakfast I had at this cafe a few days ago presentation isn't going to win any prizes but it tasted amazing.  I even made my own caramal sauce which I'm still trying to master.  My next challenge is Waffles I just need the waffle machine.
3 peices of Bread
2 or 3 Eggs
Sugar and Cinnamon
3 Tbs Butter
2 Tbs Brown Sugar
Maple Syrup
Mix eggs and dip both sides of bread into egg mixture.  Fry in a fry pan with a bit of butter until golden on both sides.  Slice banana set aside,  place butter and brown sugar into pan until sugar has disolved and browned.  Place banana in pan with butter and sugar and slightly brown banana's.  Add walnuts if you'd like then spoon over french toas. Enjoy

Preheat Oven to 200oC
Combine cheeses and shredded cheese with onion, garlic powder and finally spinach mix well.  In a small bowl combine egg and water.

Take a sheet of pastry flatten it out and lightly brush out egg and water mix brush both sides.  Spread the cheese and spinach mixture evenly.  Grab one edge of one side and gently the pastry and mix in on itself until forms a log shape. Slice into roughly 2cm pin wheels lay flat onto a greased or lined baking tray you can brush with more  egg mix if you'd like and bake for 20mins or until golden.

1 Packet of Flaky Puff Pastry Sheets
8oz Softened Cream Cheese (Punnet)
Packet of shredded Mild Cheddar 
use what ever cheese you like*
1/4 Brown Onion chopped finely
1/4 tsp Garlic Powder or Salt
10oz Packet Frozen Shredded Spinach well drained
1 Egg 
Tbs Water


500g Tomatoes fresh or tinned
2 medium Onions
2 Garlic Cloves
1 tsp Corn Flour
1 tsp Mustard Powder
1 tsp Curry Powder

1 cup Raw Sugar
1/2 cup Cider Vinegar
2 tsp Salt
2 Tbsp extra Cider

Preparing Jars for preserving

Roughly chop Tomatoes you can choose to remove the skin but I leave mine on.  Finely chop the Onions and Garlic Cloves.  Add Tomatoes, Onions, Garlic, Raw Sugar and Salt to large saucepan bring to the boil then turn hearnto medium and leave to simmer for 15 to 20 minutes.  Mix together Corn Flour, Mustard Powder and Curry Powder with Cider Vinegar to make a paste.  Add to saucepan and stir until thickened.  

You can use a 500g jar for your relish or like me two 250g jars.  Prepare jars you can find videos on sterilizing jars on Youtube.


Method  Preheat Oven 200o
​Sift dry ingredients, grate in cold Butter.  Using your fingers rub Butter and dry ingredients until it resembles breadcrumbs.  Add Buttermilk mix together until it combines to make a dough (if too wet add more flour or more milk if too dry).  Using your hands bring knead mixture together (note: don't over work mix).  Either using your hands or rolling pin roll out to desired thickness, cut into shapes and place onto a tray lined with baking paper.  Brush the tops with milk.  Bake for 10 to 15 minutes or until lightly golden.
3 cups Self-Raising Flour 
2 heaped tsp of Baking Powder 
Pinch of Salt
75g Cold Butter
1 1/2  cups Buttermilk
Half cup of Raisins (Optional)



1Kg of Strawberries
Juice of one Lemon
1Kg of Jam Setting Sugar

600g Dark Chocolate & 300g Double Cream

Add both Chocolate and Cream to a microwave safe bowl.  Microwave on high for 1 minute stir and microwave for another 1 minute stir until chocolate has completely melted if  further heating is needed microwave for another minute but two minutes should be enough.  Once ganache looks smooth and silky cover with glad wrap so it is touching the surface this will prevent it from forming a crust. Let the ganache set the longer you leave it the thicker it becomes from pouring consistancy to whipping then spreading or  watch the Youtube video.

Chop Strawberries into chunks and add to large saucepan with the juice of one Lemon.   On a low heat when the Strawberries have broken down a little add the Jam setting Sugar.  Stir until sugar has dissolved then turn up the heat and bring to a rapid boil for 5 to 6 minutes.  

To see if the jam is ready to set add a small bit of jam on a cold plate into the fridge after 2 mins you can push you finger through the jam to see iif it ripples.  Once this happens take the saucepan off the heat  leave to rest for 10mins.  Once it is ready add to prepared jars.  For instructions on how to prepare jars to preserving watch the video above under Homemade Relish Recipe.


2 cups Flour
3 Tbsp Cocoa Powder
2 Eggs
2 cups Sugar
1 tsp Vanilla Extract

185g Butter
1 Tbsp Golden Syrup
2 cups Milk
level Spn Bicarbonate Soda

Preheat Oven 180oC, Prepare cake tin grease or cover with baking paper. 
*NOTE Don't use a baking tin with a removeable bottom cake batter is really liquidy leakage will occur.

1. Sift flour and cocoa and set aside
2. In a large mixing bowl beat sugar and eggs until sugar is    
    dissolved beat in Vanilla   
3. In a small saucepan melt butter and golden syrup unitl butter
    is completely melted you could melt it in the microwave aswell.
4. Mix Flour and Cocoa into egg and sugar in small portions along
    with melted butter and golden syrup until completely
5. In a heat proof bowl microwave milk and bicarb soda for 50 to
    60  seconds.  Carefully stir in all boiled milk into cake mixture.
    If cake batter is really runny don't worry it should be like that.
6.  Pour batter into prepared tin and bake for 35mins or until
     skew comes out clean.

Leave in pan for 10mins before turning out onto wire rack to completely cool before icing.
This is my go to Chocolate Cake recipe that I've made for years it's so light and moist.  Top with ganache 


Growing up my mum would make us fried bread usually as a treat you can eat these smothered with Butter and Jam or our favourite Golden Syrup or you use it to soak up savoury Stew.
500ml Luke warm Water
2 Tbsp Activated Yeast
3 Tbsp Sugar
6 cups Flour
Vegetable Shortening (Kramelta)
In a jug dissolve yeast and sugar in luke warm water place in a warm cupboard for approx 10mins.  In a large bowl add flour after 10mins yeast should have foamed up gradually add water to flour mix until it's formed a ball of dough put dough in a warm cupboard until it's risen. When dough had doubled in size roll out on a floured surface.  Cut into portions.  Heat medium sized sauce pan melt vegetable shortening until hot enough.  Place each portion into sauce pan but don't over crowd saucepan fry until they are golden on both sides.  Place on a wire rack or absobant paper.  Enjoy :)
